It seems like it's not enough to audition the model of can you're interested in, you almost need to audition the specific pair that you'll be buying.

That is absolutely true for certain manufacturers. I never purchase their products.

I am not looking at that bracket of headphones, but I don't seem to hear things like this about the Utopias, is that also the reality?

There's an article out on IF where Tyll tests 7 Utopias. His original pair were defective (though possibly the defect happened to that review pair after leaving the factory) and another pair of the seven had a channel imbalance. That's Two out of Seven and that seems to be considered a good ratio if I'm understanding things correctly.
