American ramen culture stinks. Ramen isn't supposed to be $20 a bowl. Even when supposed to be fancy to justify prices, I haven't found a place that does both the broth and the noodles right, much less balance of toppings. But then I am a privileged snob who has eaten ramen in Japan and prefer something simpler.
I don’t think you could get simpler than this place. There’s one menu item, ramen with pork. You can add garlic or extra pork, that’s it. There is literally nothing else for sale. If you’re thirsty, he’ll give you a glass of tap water.
You have to order online, which means choosing an available time slot, which are every 10 minutes. There are 6 available bowls of ramen per time slot. 12 seats, so average turnover is 20 minutes. Until COVID, there was no takeout. You can now, but he has no lids, he doesn’t want his ramen to travel. It only meets his standard if you eat it within a couple minutes
