    Had a Westmalle Trappist Tripel tonight, and was quite good. I'm normally an IPA/DIPA/IIPA guy, but on the recommendation of this thread I've decided to start looking further into the world of the Belgian high-impact beers. Thanks for the pointers and cheers all

    If you can find it, I highly recommend Delerium Tremens. Pricey, but if you are already drinking Trappist Tripels, should be right up your alley.

    Nice Cantillon glass. I did the brewery tour in December which happened to be in the middle of brewing!

    Had a few different Trappist beers when I was in the UK.

    Have a few stocked at home now. All my favourites are impossible to find here unfortunately, but this thread has given me a few more to look for and try!

    I'm almost done with a bottle of Melange No. 3 from the Bruery. I didn't look at the ABV* until now. I think there's a reason it's hitting me harder that I'd expected. It's pretty good.

    Heard it’s a magical time to go in December. I visited in June when nothing was happening but was able to trade beers for the seasonals like fou,vig,st lam etc. I wish I could go back ugh.

    That Trappist Westvletern 12..... I have a buddy in Toulouse France right now. Anybody know if it's available there?

    Or anything else that's good that he might find there to bring back.

    I didn’t even know they waited until winter to brew. But I guess it makes sense before refrigeration existed. I’ll post pics soonish. If you are in Brussels during December you should definitely go to the Christmas markets. There was a Chimay booth where I was able to get Chimay Bleu on tap as well as a carbonnade flamand made with Chimay!

    Anything Westvletern is very hard to find outside Belgium. Your best bet is to find a beer cave and ask the merchant if he has any hidden behind the counter. Anything else should be easily available, even at the major Hypermarchés. Something really special I would ask for is Lindemans Cassis(black currants). This beer is a nice sour and black currants are banned in the US, although beer or liquor made with it should be fine through customs. I prefer this to the Lindemans Framboise, which is also good.

    Also consider French ciders from Normandy or Bretagne. Since they are in Toulouse you might be able to find basque sidra without too much issue. Also that is fois gras country. If your friend is skilled with customs he could bring that back for you too.

    If he makes his way to Barcelona, there's a place I've gone to called Lambicus that carries a very good lambic selection along with Westvleteren beers. I found that Westy's can be had outside of Belgium(within EU) in decently stocked bottle shops though be prepared to pay 10+ euros for it. It's not bad especially if you've never had it, but as a regular drinking beer, probably a bit too high if you don't have direct access to the brewery. I believe that it's around 20-ish or so for an entire case of 24 if you do a phone order with them.

    Yes, they wait until the colder months because it needs to be cool enough for the spontaneous fermentation to occur since warm climates can attract pathogenic microbes. What they do is to lay it out on this giant flat pool called a koelschip, which you probably saw on the second floor at Cantillon, and it is inoculated by the atmospheric microbes until they are placed in barrels. This is probably where the argument that gueuze is an appellation that is tied to the area of Brussels and funny because drama ensued when an American brewery put "methode gueuze" in their bottles. I think next time, I will take my time around Belgium or plan it better where I can go to the other breweries in the area since I found that 3-4 days in Brussels is already too long. Christmas in Europe next year would be nice although I don't know, I'll probably sell one of my kidneys to fund that trip at that point, lol.

    Also, I really like cassis in beers though is the Lindemann's Cassis sweetened like their other offerings? I mostly just snub all Lindemanns except for the two Cuvee Rene variations due to the addition of sweeteners to the other lambics that they brew.

    Anyway, I'm incredibly jealous of people going to France. I've only gone to Paris which was still very enjoyable but I yearn to go to the other cities and the countryside. So...jealous.

    You might not like cassis as much then, but I really like their gueuze which I don’t find sweetened at all. Still, cassis is cheap and worth a try.

    A recommendation, you can store the strong trappist for a long time, I have cases of 2008 Chimay Blue in my basement, they get even better over the years....

    Yeah I’ve had some cassis in some beers and really liked them but idk if I want anything that’s sweetened because it might mask the complexity. If anything I’d like to get the entire lineup for 3F, Boon VAT and cantillon though I don’t have any ambition for Lou Pepe. Perhaps I’d get a mamouche but that’s about it.
