I've realized Japanese people too are enlightened to the joys of mayo. Only they're a bit unimaginative with it.

Mint + green chilli + mayo
    Basil + garlic + mayo
Lao Gan Ma people's bean paste + mayo

Anyone who tries any of the above can thank me later.

Oh man, sorry I missed this thread. Glad you had a good time. I am headed to Japan for my third time in August 2016 to do the dawn hike on Mt. Fuji. Hoping to make it up to Hokkaido, too to visit some whiskey distilleries.

Can we turn this thread into a "My favorite things about Japan" thread now that the OP's trip is over? One of my favorite experiences was finding the Oyaide shop in Akihabara. With the prices the distributors charge here, I was expecting a nice store with high end stuff. It was literally a stall in an alley under the train tracks. Spools of all sorts of wires hanging from the ceiling, boxes of connectors everywhere. Best part was the prices! No multi-middleman markups, plus solid USD to yen ratio made me a very happy DIYer. I would have bought so much more if I had had more cash on me (no credit cards).
