    @FallingObjects I've seen vids of pommes aligot, I remain slack jawed. Will probably just make with mozzarella, price of traditional cheeses is scary.

    @Ringingears that looks a lovely recipe! I've tried something similar, but with less butter and more accidental char haha. Time to redeem myself!

    Kidding aside did you get to try the kamote fries when you visited here? Basically sweet potato fries. I may or may not prefer them haha

    Seriously though - do they have cheesy scalloped potatoes in the Philippines? If not then search google and choose a well-rated recipe. They’re all tend to be similar.

    I can say I've not had scalloped potatoes in a restaurant that I recall. My memory does suck so grain (or pinch) of salt, haha.

    I'm probably going for that first, then pommes aligot after I grow more confident. I had fun last time I tried, was just careless.

    Huh, TIL. Yeah regular fries are kinda meh for me unless they're perfectly done, heavy crunch on the outside and fluffy on the inside. Barring that it's either well-spiced or sweet potatoes, haha.

    Ahh... chips! Wonderful. But yes, they have to be done right. And served with Heinz Tomato ketchup.

    And here's my heresy: I never peel them! I bet that's got lots of people shaking with horror!

    In the US they’re mostly peeled but some places serve a bigger wedge fry with the peel on. I like waffle fries. McDonalds actually sells them in China but they call them crisscut fries.

    Unpeeled potatoes make great fries, love the skins! Depends on how icky beforehand though.

    Gnocchi is amazing and goes great with browned butter and a marinara sauce. Just like my (Chinese) grandma used to make.

    And if you want a nice hack for making decent kriss kross fries knockoffs, chuck finely shredded potatoes into a waffle maker with a bit of oil!

    Twice-baked potatoes are tasty. (there's more to it than just that…look for a recipe) Also pierogis. I like potato, egg, and cheese soft tacos with salsa for breakfast. Garlic mashers.

    Smashed baby potatoes; boil until soft, crush them almost flat (you don't want them to fall apart when handled), pan fry in oil until crispy, top with your choice of seasoning, salt and pepper to taste. I found chives, oregano, and parsley to be sufficient.
