Apple Notes gets my vote. It's improved quite a bit over the years.

@fraggler I use a notebook, nothing like using a pen and paper to map out stuff.

I use miro.com and scapple for that purpose. Both are good. Happy to answer any questions on either.

Also would agree with @ColdsnapBry that pen and paper (or in my case, stylus and Boox Note Air drawing app) are uniquely good for low-friction thinking/mapping out stuff.
