Don't get be wrong, I like quality fresh ingredients with no pesticides, but maddening when I can't find a normal choc-chip cookie and only keto non-gluten pound cakes are available. What's the point?
I love the gluten craze. It has had the side effect of helping people who really need to be gluten free. Both my father and brother have Celiac disease. Gluten literally kills them slowly over time. It's hereditary so I could even develop it anytime. Celiac isn't as uncommon as you'd think.
